Ingredients:
2 large kumara (1 kg), peeled
6 baby brown onions, halved (or more)
1/2 cup (125ml) honey
2 tbs balsamic vinegar
2 tbs seeded mustard
1 tbs water
1 tbs peanut oil
1 tbs grated fresh ginger
50 gm baby rocket or spinach leaves
Cooking instructions
Slice kumara into 1cm rounds. Put in a large bowl with onions and all other ingredients except leaves. Mix well. Drain vegetables but reserve honey mustard mixture.
Put veges on wire rack over foil covered oven tray. Bake uncovered in moderate oven about 35 mins drizzling mixture over the veges from time to time. Serve mixed with rocket or spinach.
