Ingredients:
600 gm zucchinis
salt 1 small onion, grated 1 clove garlic, minced 100 gm fetta, crumbled 1/4 cup finely chopped dill 2 tbs chopped parsley 2 eggs, beaten 1/3 cup plain flour 2 tbs rice flour freshly ground black pepper olive oil Cooking instructions
Grate zucchini, put in colander, sprinkle with salt, and toss, then leave for 20 mins to drain. Rinse, then squeeze zucchini in a cloth to extract as much liquid as possible. Mix everything into a batter, then fry spoonfuls of the mixture in oil until golden brown. Drain on paper towelling. Serve piping hot with yoghurt mint sauce.
