Ingredients:
6 roma tomatoes (450gm), chopped coarsely
3 lebanese cucumbers (400gm), chopped coarsely
1 green capsicum (200gm), chopped coarsely
1 small red onion, cut into thin wedges
1 cup (150gm) kalamata olives
1/2 cup (125gm) extra virgin olive oil
150g fetta cheese
1/2 tsp oregano
Cooking instructions
Combine the vegetables in a bowl. Add almost all the oil and toss gently. Cut cheese into two large pieces and put on top of salad. Sprinkle oregano on the cheese and drizzle with remaining oil.
