Ingredients:
2 medium boiled potatoes, diced
2 onions, chopped roughly
2 cloves garlic, crushed
4 eggs beaten and seasoned to taste
butter or oil
a little parsley
Cooking instructions
Saute onions in a little oil, then potato and garlic until lightly browned. Add parsley to seasoned eggs and pour over the contents of the pan, shaking to distribute evenly. After 3 to 4 mins put the pan under the grill to cook the top of the tortilla, which should be well set but not burnt. If it looks dry dot with a little butter before serving.
Serves 2. You can add other things as long as they are cooked before adding the eggs.
