Ingredients:
butternut pumpkin rounds
zucchini slices
eggplant slices
mushrooms, chopped
1 can tomatoes
1 tbs tomato paste
1 clove garlic, crushed
1 - 2 tbs pesto
olive oil
grated cheese
Cooking instructions
Bake pumpkin, zucchini and eggplant slices on an oiled tray in the oven, spray with oil if necessary. Saute mushrooms. Make a sauce by cooking garlic in a little oil, and then adding tomatoes, tomato paste, and pesto.

Make stacks of veges on each plate, put mushrooms on top, and serve with sauce and grated cheese if desired.
