Ingredients:
70gm margarine or butter
1 brown onion, chopped
2 potatoes, diced
125gm green beans, sliced
250gm zucchinis. sliced
1 cup vegetable stock
1 tbs curry paste or powder, or according to taste
1 can red kidney beans
1 tbs oil
150gm mushrooms, sliced
pepper
Cooking instructions
Heat margarine in large saucepan, saute onions, add potatoes and beans. Mix and cook for 15 mins. Add zucchini, stock, curry paste and red kidney beans, cook further 10 mins. Add mushrooms that have been separately sauted.

Good with rice and a green salad. Improves in flavour when cooked in advance and reheated just before serving.
